COPALLI CACAO - Rum Review

Cocktails in the city was a huge welcome break from a year void of social activity. Set in a cornered off grassy area near Tottenham Court Road. There was ample space to browse the many stalls, seating for chilling and areas for some good old industry talks.

There was a late summer sun and I was happy see many rum stands present. One in particular caught my eye...Copalli Rum.

The bottle of the white rum was striking. A tall bottle with dark emerald green jungle foliage label making the white text brand name stand out. As I take in the aroma a rather tall gent steps over, turns out it's the brand ambassador Mario. Awesome luck to get a little further info.

So Copalli rum, distilled in the southern region of Punta Gorda in Belize and one of only two distilleries in the country. It's a newish distillery, only opening in 2015 but is already making 2,000 bottles a year and clearly getting around as I sip away in sunny London.

This brand is big on doing things the right way for the planet. All the rums are organic and the organisation is split between farming, distilling and their super luxury eco lodge in the heart of the rainforest. @Copalli Rum if you ever want me to see the distillery I will be there in a heartbeat.

Copalli has three expressions, the Claro, the aged and the Cacao to which the later is my focus for today… and boy it deserves it!

The Cacao uses the Claro as the base, distilled using only canopy water (rainforest water that is collected from the canopy) which I hope one day I can see as my imagination runs wild at the thought of how they manage such a feat.

60% of the rum is stilled in a Creo Column while the other half distilled in special pot still, commonly used to make brandy. The rum is then aged for 1 year in new oak bourbon barrels with fresh cacao from the forest to deliver a truly great tasting rum.

Smell: If you close your eyes and take it in, it's like being transported back to your youth as you pine over a chocolate milkshake.

Appearance: It’s such a clear liquid its like looking through crystal, a surprise when you consider it's been aged for a year.


Taste: truly delicious rum. the liquid is incredibly smooth as it goes down. rich coco flavours coat your mouth then evaporate as it has a dry finish. im taken aback by the delicate complexity of this essentially chocolate flavoured rum.


Rating: 5/5... Needless to say I ordered this as soon as I left Cocktails in the City.

You can get the range at Master of Malt for those in the UK. They promote using this rum to add a chocolate twist to an Espresso Martini and they are bang on the money with this cocktail choice.
