"How to make Festive infused sugar syrup"

Fundamentally it's a easy process. The recipe below is a 1:1 sugar ratio with festive smelling ingredients but you can add more, less or additional ingredients as you like. I've also added some demerara sugar as well to add depth. Experiment and enjoy the ride.

So get yourself some ingredients that make you feel warm and festive inside and follow the below to make some delicious festive cocktails. From holiday Manhattans to everyone’s favourite Rum Hot Toddies.

Recipe 1:1 Sugar

Method

  1. Pour 250g of boiling water, 100g of demerara and 150g of white sugar into a pan.

  2. Add in your festive ingredients, I've gone for 3x star anise, 1x cinnamon stick and 10x cloves.

  3. Simmer on a low heat (NEVER BOIL) for 5 minutes and stir until dissolved.

  4. Take off the heat and leave until cold. Then pour into a sealable bottle or container ready for use.

Once made sugar syrup can last 3-4 weeks comfortably when stored in the fridge.
