Step inside Sydney Australia's only craft rum distillery, in the heart of the city. Learn about rum, Brix's local aging process, how to make cocktails and most of all enjoy some delicious drinks in the sun.
So you decided to fly across the world to the sunny action packed city of Sydney. But it’s not all Bondi beach walks and sightseeing that’s available. If you are clever enough you will head to Brix Rum Distillery. The perfect place to learn about rum, see its custom built still, taste some flights and enjoy great cocktails as the city comes alive.
The front is filled with colour and open glass. Situated on the main road with outdoor seating, perfect to watch the world go by. Its Australian made, custom built 1,800ltr still sits proudly by the entrance. Next to it is the well stocked and very long “L” shaped bar. Perfect to host people for their cocktail master classes.
However, back to the rum… Let’s check out the process. There are 8x 1,000ltr capacity fermentation tanks perfectly stacked into the space behind the bar. All are temperature controlled and pump filled from a central mixer. Brix uses two fermentation formulas which are used in different quantities for their rums. One is a lighter wash using champagne yeast with the other being a funky Jamaican yeast.
All are monitored by a 3 strong production team who are overseen by James and Shaun. The copper pot still has a four plate, removable column for run flexibility with most batches going through a stripping run before a longer cut spirit run.
All of Brix's aged rum is done so with locally sourced wine barrels. Aged at 60% ABV, their non temperature-controlled Sydney warehouse is nurturing over 1400 barrels in a variety of ex casks.
Checking Out Brix's Rum Range
Brix has a huge range of rums on offer. From classic unaged to aged expressions to a range of higher proof cask rums to another range of flavoured rums.
Classic’s - Brix’s clear rum is a mix of rum fresh of the still and aged rum which is charcoal filtered, producing a mellow and sweet finish.
This is followed by their aged rum which is done so in ex red wine barrels giving it it's award winning unique flavour.
Casks - Brix currently sells 3x higher proof cask rums, each aged in different wine, port and ale barrels from the region, all to a minimum age of 3 years. My favourite was the 4 year old aged in Pinot Gris barrel which was deliciously crisp. For a funky rum try the "Double Aged" which is finished in an ex IPA barrel after having 3 years in red wine barrels. For a richer, stronger flavour the Tawny Cask is the one for you.
Flavours - Brix’s has three different flavoured rums on offer. Spiced, Mandarin and their signature Mango. Sadly we ran out of time to try them all but the mango one was insane. It really salivates the mouth and delivers a natural sweetness from the macerated mangos.
